Filipino Recipes for a Delicious Dessert


Filipino food has a diverse style of cuisine, drawing on traditional Asian roots and more modern Western influences. Filipino food often provides contrasting flavors, mixing sweet with salty, so we'll look at a few recipes for desserts, Filipino style, whether it even applies to their puddings!

First up is a simple ice cream, Philippine style:

Mango Ice Cream

Ingredients

1.5 pounds of fresh mango pulp
7 ounces sugar
3 tablespoons mango nectar
250ml cream

Start processing the Mango puree, then add the sugar and nectar, stirring the mixture until all is dissolved. Whip cream into stiff peaks in a bowl, mix the mango, and place the tart mold, covered and placed in the freezer for several hours.

Pour the mixture into the pan and whip into a fine paste. Add into the mold, cover and freeze, then remove the ice cream 15 minutes before serving up.

Well, the ice cream is all well and good, but for something more interesting, how about bibingka, coconut rice dessert?

Ingredients

2 and 1 / 2 kg rice Mochi
400ml coconut milk
1 kg brown sugar
Banana leaves

Begin cooking the rice in the pan as normal and after 10-12 minutes add the coconut milk and a quarter past one cup of brown sugar. Cook it over medium flame, stirring constantly, for 20 minutes, until it thickens.

Line a baking tray with banana leaves and preheat oven to 350 degrees. Put the cooked rice in a large bowl, mix the rice and spread the brown sugar to hot and the rice evenly.

Place the preparation in a deep pot to a mold, then cover with remaining half cup of coconut milk. Bake it 20 minutes, then place under grill for 5 minutes. This will give you one big desert them chop the individual parts, and you should get 4 or more servings.
